Grilled lemonade and Sunshine in a Glass

Have you ever had grilled lemonade? How about grilled lemonade infused with ginger? Here's how we made it and a recipe for a great sunny day cocktail using the lemonade we call "Sunshine in a Glass"

Slice 8 lemons in half lengthwise. Dip cut side in sugar and place cut side up on a tray being careful not to knock the sugar off.
Heat grill to medium high. Grill lemons cut side down until slightly caramelized.
Set aside to cool and then squeeze and collect the juice, approx. 2 cups. Place in your favorite 1 gallon lemonade vessel.

While the lemons are caramelizing bring 2 cups of agave nectar, 2 cups of water and a 2" piece of peeled sliced ginger up to the boil. Remove from heat and add the zest of 1/2 of a lemon. Cool, strain and add to your 1 gallon lemonade vessel along with your lemon juice. Top off with around 10 cups of water to make a gallon  or just add water to taste.

Now that you have a gallon of Grilled Lemonade here's how to make "Sunshine in a Glass"

Step 1: fill a pint mason jar with  ice. Step 2: add a couple slices of the grilled lemon peel.

Step 3: add 1.5oz  Absolute Citron.
Step 4: Top off with your Grilled Lemonade and enjoy!!!
